Happy National Pancake Day!!
What can be more delicious than a soft pillow of dough crisped at the edges then bathed in sweet dark maple syrup? Nothing! Pancakes are one of my favorite foods, note not just breakfast food, I could eat it for breakfast, lunch and dinner. There is just something about this food that makes my mouth salivate.
The beauty of a pancake is the way you can change it up. The flavor of syrup can be changed, growing up I loved them with Smucker's Boysenberry syrup. You can add different fruit compotes, my favorite is blueberries, the combination of the sweet and tart blueberries brings the pancake to a different dimension. You can add fresh fruit, bacon (YUM), nuts and chocolate to make it special. You can also make these delicious hot cakes into different shapes. You may get a few throw aways but once you get the hang of it its fun for the whole family. You can double duty cookie cutters if freestyle is not your thing.
Not only can you add all these different things inside the batter there are also those things you can wrap in them. Pigs in a blanket come to mind. I love sweet and salty so this combinations is scrumptious! If you want to push the envelope just a little bit further you can tie up your pigs in a blanket with stripes of bacon. I know it's crazy and ridiculous but once you take that first bite you'll understand. Sweet maple, salty pork, soft dough and crispy bacon it's a pancake dreamers meal.
If only it was possible to eat pancakes everyday but alas it cannot be. As wonderful as they are they must be eaten in moderation, (sigh) very sad. But this makes the times I do eat them so much more enjoyable. I've thought about trying to make whole wheat pancakes so I can enjoy them more often because then they would be healthier but I worry that it wouldn't be as fluffy and soft as regular pancakes. One day I'll chance it and maybe I'll be happily surprise.
